INDIAN STYLE PILAU

INGREDIENTS:QUANTITY:
Uncle Ben's® Basmati Rice 250 ml (1 cup)
chicken broth 500 ml (2 cups)
onion, finely chopped 50 ml (1/4 cup)
butter 15 ml (1 Tbsp)
almonds, dry roasted, chopped 125 ml (1/2 cup)
apricots, dried, chopped 50 ml (1/4 cup)
fresh mint leaves, minced 50 ml (1/4 cup)
fresh cilantro leaves, minced 50 ml (1/4 cup)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 30min.
  1. Melt butter in a saucepan and sauté chopped onion until transparent. Add rice and stir to coat the rice well. Add chicken broth and bring to a boil. Stir, cover and reduce heat to medium-low and simmer for 20 minutes.
  2. Meanwhile, in a non-stick skillet, roast the almonds (or combination of nuts)over medium-low heat until lightly golden.
  3. Stir roasted nuts, apricots and fresh herbs into the rice. Adjust seasonings with salt, as desired.
