CANCUN RICE BOWL

INGREDIENTS:QUANTITY:
Uncle Ben's® Converted® Brand Rice, prepared as directed 375 ml (1-1/2 cups)
butter 15 ml (1 Tbsp)
chicken breast, no skin, no bone, cut into 1" cubes 500 g (1 lb)
green onions, sliced 50 ml (1/4 cup)
jalapeno chile peppers, sliced 50 ml (1/4 cup)
garlic, minced 15 ml (1 Tbsp)
red bell pepper, cut into strips 50 ml (1/4 cup)
chicken broth 50 ml (1/4 cup)
lime juice 30 ml (2 Tbsp)
corn starch 5 ml (1 tsp)
cilantro, minced 10 ml (2 tsp)


INSTRUCTIONS: Prep: 10min. | Start to Finish: 30min.
  1. Start cooking rice. Heat butter in a large, non-stick skillet over medium heat. Lightly brown chicken. Stir in green onions, Jalapeno, garlic and red peppers. Cook until vegetables are tender.
  2. Mix chicken broth, lime juice, corn starch and cilantro together. Add it to the skillet, stirring to thicken slightly.
  3. For each serving, place 250 ml (1 cup) hot rice in a bowl and top with 150 ml (2/3 cup) of chicken mixture.
