LEMON SHRIMP RICE

Uncle Ben's® Bistro Express ™ ® - Original Converted ® Brand rice, prepared as directed 1 pkg (1 pkg)
butter 30 ml (1 tbsp)
jumbo bay shrimp, peeled and deveined 225 g (1/2 lb)
garlic, minced 5 ml (1 tsp)
lemon juice 15 ml (1 Tbsp)
red bell peppers, finely chopped 75 ml (1/3 cup)
cilantro, minced 50 ml (1/4 cup)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 15min.
  1. Melt butter in a non-stick skillet over medium heat and sauté shrimp, garlic and red peppers until shrimp turn pink. Add lemon juice, swirling to form a sauce.
  2. Stir in minced cilantro and serve immediately over hot rice.
