LEMON CHICKEN & RICE

INGREDIENTS:QUANTITY:
vegetable oil 15 ml (1 Tbsp)
butter 30 ml (2 Tbsp)
chicken breast half without skin, cut in 1" cubes 500 g (1 lb)
Uncle Ben's® Natural Select® - Chicken & Herb Rice 300 ml (1-1/4 cups)
lemon juice 75 ml (1/3 cup)
water 500 ml (2 cups)
rosemary 1 ml (1/4 tsp)
spinach leaves, whole, trimmed 750 ml (3 cups)
tomatoes, red ripe, chopped 250 ml (1 cup)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 15min.
  1. In a skillet, heat oil and butter over medium-high heat. Sauté chicken until no pink remains.
  2. Add rice, lemon juice, water and rosemary and bring to a boil. Reduce heat, cover and simmer for 10 minutes.
  3. Serve rice and chicken over a bed of spinach leaves. Garnish with chopped, fresh tomatoes.
