COCONUT PORK BOWL

INGREDIENTS:QUANTITY:
vegetable oil 15 ml (1 Tbsp)
onions, diced 50 ml (1/4 cup)
red peppers, diced 50 ml (1/4 cup)
pork center loin chops, thinly sliced 500 g (1 lb)
chicken bouillon 10 ml (2 tsp)
coconut milk, canned 175 ml (3/4 cups)
green onion, thinly sliced 50 ml (1/4 cup)
Uncle Ben's® Instant Rice, prepared as directed 500 ml (2 cups)


INSTRUCTIONS: Prep: 10min. | Start to Finish: 15min.
  1. Sauté onions and red peppers in oil until softened. Push vegetables to the sides of the pan, add pork strips and cook until no pink remains.
  2. Stir in chicken bouillon and coconut milk. Simmer slowly while rice is cooking.
  3. Place cooked rice in a bowl and ladle coconut/pork mixture over.
