COCONUT PORK BOWL

INSTRUCTIONS: Prep: 10min. | Start to Finish: 15min.
- Sauté onions and red peppers in oil until softened. Push vegetables to the sides of the pan, add pork strips and cook until no pink remains.
- Stir in chicken bouillon and coconut milk. Simmer slowly while rice is cooking.
- Place cooked rice in a bowl and ladle coconut/pork mixture over.
