SPRING VEGETABLE MEDLEY

Uncle Ben's® Boil-in-Bag Rice - 225g, prepared as directed 2 pkg. (2 pkg.)
vegetable oil 15 ml (1 Tbsp)
garlic, minced 10 ml (2 tsp)
shiitake mushrooms, sliced 250 ml (1 cup)
zucchini, diced small 250 ml (1 cup)
carrot, diced small 125 ml (1/2 cup)
green onions, thinly sliced 3 ea (3 ea)
light soy sauce 45 ml (3 Tbsp)


INSTRUCTIONS: Prep: 10min. | Start to Finish: 25min.
  1. Heat oil in a non-stick pan over medium heat. Sauté garlic and mushrooms for 2 minutes. Add zucchini and carrots and continue to stir fry until carrots are tender crisp.
  2. Stir in green onions and soy sauce. Serve immediately over hot cooked rice, or mix well drained rice into vegetable mixture.
