VEGETABLE TERIYAKI RICE WITH STIR-FRIED CHICKEN

INGREDIENTS:QUANTITY:
vegetable oil 30 ml (2 Tbsp)
garlic, minced 10 ml (2 tsp)
ginger root, peeled and minced 15 ml (1 Tbsp)
chicken bouillon 5 ml (1 tsp)
water 375 ml (1-1/2 cups)
Uncle Ben's® Instant Rice, uncooked 375 ml (1-1/2 cups)
Oriental vegetable mixture, frozen 250 ml (1 cup)
orange peel, finely grated 5 ml (1 tsp)
chicken breasts, without skin 500 g (1 lb)
teriyaki sauce 30 ml (2 Tbsp)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 10min.
  1. Heat 15 ml (1 Tbsp.) vegetable oil in saucepan over MEDIUM heat. Sauté garlic and ginger for about 2 minutes.
  2. Add chicken bouillon, water, INSTANT RICE and frozen vegetable mix to saucepan. Increase heat to HIGH heat and bring to a rolling boil. Reduce heat to LOW, cover and simmer until liquid has been absorbed (about 5 minutes).
  3. Meanwhile, heat remaining oil in frying pan over MEDIUM-HIGH heat. Add cubed chicken and sauté until no pink remains (about 5 - 7 minutes).
  4. Stir cooked chicken and orange peel into prepared rice mixture. Fluff with fork.
  5. Serve rice mixture drizzled with teriyaki sauce.
