CREAMY VEAL TARRAGON & RICE

INGREDIENTS:QUANTITY:
Uncle Ben's® Natural Select® -Parmesan & Butter Rice 500 ml (2 cups)
butter 15 ml (1 Tbsp)
veal cutlets, cut into thin strips 500g (1 lb)
corn starch 15 ml (1 Tbsp)
mushrooms, sliced 225 g (1/2 lb)
light cream cheese, cubed 225 g (1/2 lb)
roasted red pepper, diced 75 ml (1/3 cup)
fresh tarragon, minced 15 ml (1 Tbsp)
white wine, optional 30 ml (1 Tbsp)


INSTRUCTIONS: Prep: 10min. | Start to Finish: 25min.
  1. Melt 10 ml (2 tsp.) butter a non-stick pan over medium heat and sauté veal strips for 3-4 minutes. Remove from the pan.
  2. Add the remaining 5 ml (1 tsp.) of butter to the pan and sauté mushrooms until softened.
  3. Add rice and 925 ml (3-3/4 cups) water. Bring to a boil, reduce heat, cover and simmer gently for 10 minutes.
  4. Stir in cubed cream cheese, roasted red peppers, tarragon and wine. Recover and set aside for 5 minutes. Stir well and place on a platter. Place reserved veal over the top.
