ASPARAGUS RICE SALAD

INGREDIENTS:QUANTITY:
Uncle Ben's® Natural Select® - Parmesan & Butter Rice, prepared as directed 300 ml (1-1/4 cups)
asparagus spears, trimmed and blanched 300 g (10 oz)
eggs, hard boiled 3 (3)
oil and vinegar salad dressing 175 ml (3/4 cup)
black pepper, optional 2 ml (1/2 tsp)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 15min.
  1. Cool rice to room temperature. Trim the bottom of thin asparagus spears. Cut asparagus spears into bite-size pieces and blanch them in boiling water for 2-3 minutes. Remove, drain and rinse under cold water. Cut hard boiled eggs into wedges.
  2. Mix cooled rice, asparagus, salad dressing and pepper together. Place egg wedges over the top before serving.
