225 g (1 cup (uncooked))

red pepper, halved and seeded

zucchini, halved lenghtways

portobello mushrooms

olive oil

15 ml (1 Tbsp)

|
garlic, minced

5 ml (1 tsp)

balsamic vinegar

10 ml (2 tsp)

pesto sauce

75 ml (1/3 cup)

INSTRUCTIONS: Prep: 5min. | Start to Finish: 15min.
- Toss cut vegetables with olive oil and garlic. Preheat the BBQ and place the vegetables on the grill for 3-4 minutes on each side.
- Meanwhile, prepare rice according to directions on the side burner of your BBQ. Drain when vegetables are grilled.
- Remove vegetables from the grill and place them in a bowl. Toss them with balsamic vinegar and 30 ml (2 Tbsp.) of the pesto sauce. Mix the remaining pesto sauce into the drained rice before serving alongside the grilled vegetables.
