SUMMER TIME GRILLED VEGETABLES & RICE

INGREDIENTS:QUANTITY:
Uncle Ben's Long Grain Perfection™, prepared as directed 225 g (1 cup (uncooked))
red pepper, halved and seeded 1 (1)
zucchini, halved lenghtways 1 (1)
portobello mushrooms 2 (2)
olive oil 15 ml (1 Tbsp)
garlic, minced 5 ml (1 tsp)
balsamic vinegar 10 ml (2 tsp)
pesto sauce 75 ml (1/3 cup)


INSTRUCTIONS: Prep: 5min. | Start to Finish: 15min.
  1. Toss cut vegetables with olive oil and garlic. Preheat the BBQ and place the vegetables on the grill for 3-4 minutes on each side.
  2. Meanwhile, prepare rice according to directions on the side burner of your BBQ. Drain when vegetables are grilled.
  3. Remove vegetables from the grill and place them in a bowl. Toss them with balsamic vinegar and 30 ml (2 Tbsp.) of the pesto sauce. Mix the remaining pesto sauce into the drained rice before serving alongside the grilled vegetables.
