STIR-FRIED ORANGE SHRIMP PERFECTION

INGREDIENTS:QUANTITY:
Uncle Ben's Long Grain Perfection™, prepared as directed 169 g (3/4 cup)
oil 20 ml (4 tsp)
garlic, minced 4 ml (1 tsp)
shrimp, peeled and deveined 450 g (1 lb)
corn starch 30 ml (2 Tbsp)
snow pea pods, fresh, cut in half diagonally 250 ml (1 cup)
orange marmalade 60 ml (4 Tbsp)
lemon juice 30 ml (2 Tbsp)


INSTRUCTIONS: Prep: 10min. | Start to Finish: 25min.
  1. Cook rice according to the package directions.
  2. Heat oil in a non-stick pan over medium-high heat. Place well-drained shrimp in a bowl and toss with the corn starch. Quickly sauté shrimp until pink.
  3. Stir in garlic and snow peas.
  4. Mix marmalade and lemon juice with 30 ml (2 Tbsp.) water and add it to the pan with the shrimp and snow peas. Stir to heat through. Serve immediately over hot cooked rice.
